When you are craving something sweet, this protein packed chocolate collagen banana bread hits the spot. This banana bread is gluten free, dairy free and grain free.
Preheat oven to 350 degrees.
Combine wet ingredients in a blender or Vitamix:
2 eggs
2 bananas
1 tsp vanilla
½ cup coconut cream
Combine dry ingredients:
1 Cup Almond Meal
⅓ Cup Flax meal
½ Cup Cassava Flour
2T Coconut Flour
½ tsp Baking Soda
2T COFO
½ Tsp Sea Salt
1 Heaping Tablespoon Organic Raw Cacao powder
¾ Cup Organic Coconut Sugar
1 Cup Enjoy Life Chocolate Chips (or mini chips)
Fold dry ingredients into wet and bake in a 8x13” pyrex glass pan or divide batter into muffin cups and bake bread for 40-45 min muffins for 20-25 min. Insert toothpick. Bread/muffins are done when toothpick comes out clean.
