Prep
Preheat oven to 275 degrees
Mix
32 oz. Bob’s Red Mill Gluten Free Oats
6 T Cofo Cacao
4 T Organic Cacao Powder
3 T Organic Flaxseed Meal
4 T Organic Chia Seeds
8 oz. bag of Sliced Almonds
1 Cup Extra Virgin Olive Oil
½ Cup Raw Honey
¾ Cup Real Maple Syrup
Additional Options (add AFTER BAKING):
Organic Flaked Coconut
Enjoy LIfe brand mini chocolate chips
Directions
Combine all dry ingredients together and toss until combined. Add oil to the dry ingredients. Thoroughly coat all the dry ingredients with the oil. Mixing for a few minutes until all the dry ingredients are saturated with the olive oil. Finally add the maple syrup and thoroughly coat. Lastly once coated in oil and maple syrup, drizzle the honey and toss to coat.
You are ready to BAKE!
Spread ⅓ of the granola on a parchment lined cookie sheet or baking pan. Bake for 20 minutes then take the pan out of the oven and flip and move granola around the pan spreading granola evenly across the pan. Put the pan back in the oven for an additional 20 minutes. Once done the warm granola will appear uncooked and moist when you remove it from the oven. No fear! It’s DONE! Put the warm granola in a large bowl and let cool for 45 minutes before adding additional goodies like coconut or chips.
Repeat this process 2 more times with the remaining granola. Watch your granola closely-every oven is different and you might need to adjust your baking time by 5-10 minutes per batch. While this is a time consuming process it’s well worth every minute spent in the kitchen! Preferably store your granola in an airtight glass container at room temp. ( pantry or counter). Don’t worry about how long it will last-you’ll be making another batch before you know it.
ENJOY!
