For this recipe we used Simple Mills almond flour pancake and waffle mix. Simple Mills can be found at your local Whole Foods market and most grocery stores. They use only natural ingredients with no artificial flavors, that’s why we like them.
Makes 4-6 pancakes.
1 Cup of Simple Mills Gluten Free Pancake mix
2 Tbsp Cofo Provisions Lemon Collagen mix
½ Tsp poppy seeds
2 ½ Tbsp water, milk or milk alternative
1 Tsp of lemon zest
1 Tbsp of Oil (coconut or vegetable oil)
Whisk together eggs, milk, oil in a large bowl. Add mix, Cofo Lemon Collagen and poppy seeds, whisk until well combined.
Heat an oiled pan or skillet over medium heat. Pour batter onto prepared pan and cook until edges are dry, turn and brown other side.
NOTE: We suggest oiling the pan after each pancake to prevent the collagen from sticking to the pan.
