Collagen Cacao Cinnamon Chia Pudding

The night before a workout I plan my pre-workout breakfast. Typically I can't eat eggs early in the morning so oatmeal or chia pudding is my go-to. This chia pudding is super easy to make the night before. Let it sit overnight in the fridge and then it's ready for the morning and it includes 10g of Cofo collagen protein.
1/2 cup Organic Coconut Milk
1/2 cup Organic Oat Milk
1/3 cup Organic Chia Seeds
1 tsp Organic Cinnamon
2 tbsp Cofo Collagen - Cacao
In a jar (I used a jam jar), add all liquids then add the chia seeds. With a frother (yes, a hand frother - we used a spoon for our first pass and the chia were not evenly dispersed), blend until the chia seeds are within the pudding and not mostly found at the bottom of the jar. Add cinnamon and collagen and froth so that the powder is absorbed in the chia pudding. When you see no more powder and the pudding is an even chocolate color then you can stop blending.
Seal the jar with a tight lid and place in the refrigerator for at least 12 hours. We recommend you make this at night while your dinner is cooking!
Top with your favorite season fruit and roasted coconut chips - yum!
