Collagen French Lentil Soup

Collagen French Lentil Soup
This is perfect on cold nights or long days when you need a dinner to warm you up and nourish your body with lots of goodness.
Ingredients:
1 Large onion chopped
3T Extra Virgin Olive Oil
4T Unflavored COFO
2 Bunches of Swiss chard
2 1/2 cups French lentils soaked overnight and drained
3 Cups chopped carrot
2 Boxes of Pacific brand veggie broth
1/2-1 1/2 C ups of filtered water
Make:
Soak French lentils overnight (or for 24 hours if possible changing the water 1-2 times) Warm a soup pot on med heat and cover the bottom of the pan with the olive oil. While the oil is warming chop the onion. Toss the chopped onion into the oiled pot and sauté.
Wash the chard and remove greens from the stems. Keep the stems for later or chop and sauté the chard stems with the onion. Add the chard leaves once chopped. Sprinkle the COFO protein peptides over the chard onion mixture and stir. Add the 2 boxes of broth. Add the lentils. Bring to a boil.
While the lentil chard mix is boiling peel and chop the carrots. Once chopped add the carrots to the soup and turn the heat down to a simmer. Simmer until the lentils are soft and the soup begins to thicken. 45 min to 1 1/2 hours.
Depending on how thick or brothy you like your soup you might need to add filtered water as it cooks. Adding 1/2 cup to 1 cup at a time until reaching desired consistency
