Frozen Peanut Butter Chocolate Banana Bites

This is Cofo's spin on a classic, we added some peanut butter to give this snack a little more protein to help get you through your day. Use ripe bananas for best results. 

Ingredients: 

  • 3 bananas ripe but still firm
  • ¼ cup peanut butter or your favorite nut butter
  • 10 oz - 280 g dark chocolate chopped. 
  • 2 tablespoons Coco Provisions Marine Collagen - Cacao
  • 2 teaspoons coconut oil optional but recommended

Directions: 

Cut bananas into bite size slices. Set aside on a baking sheet lined with parchment paper. Heat peanut butter in the microwave about 30 seconds until it's easily spreadable. Spoon peanut butter on half of the banana slices and top with the other half of the banana slices.  Place in the freezer for about two hours.
Place chopped chocolate (or chocolate chips if using) in a microwave-safe bowl  along with the coconut oil. Microwave for 30 seconds, stirring in between, until chocolate is melted. Mix in 2 tbs of Cofo Provisions - Cacao until completely blended. Prepare another baking sheet (or a plate) with parchment paper. Take two to three bites out of the freezer, dip them in the melted chocolate and using two forks, "roll" them in chocolate to cover all sides.  Repeat with remaining frozen sandwiches. Place the chocolate covered bites back in the freezer until set. Once they are set, you can transfer them in a container. Store in the freezer.
