Gluten Free Collagen Oatmeal Raisin Choc Chip Cookies
These are perfect as a protein/carb pick-me-up in cookie for for your long, sustained outdoor adventures, or while relaxing and reading a book outside on the hammock! Recipe by Caren H., Cofo Ambassador, Find Caren on the gram @carenhh.
Preheat oven to 325. Soak 1- 1 1/2 cups of raisins in warm water for 10 minutes while preparing the other ingredients. Drain before adding to the resining ingredients.
1 1/3 stick butter
3/4 cup coconut sugar
1/2 cup maple syrup
2 tsp vanilla
2 T Cofo Unflavored collagen peptides (12g of protein)
1 cup cassava flour
1/2 cup almond flour
1 tsp cinnamon
1/4 tsp sea salt
2 cup GF old fashioned oats
1/8 tsp nutmeg (optional)
1/2 c mini chips (optional)
Fold dry into wet until combined. Do not over mix. Drop in a dollop (or flatten the dollop with a fork) onto a parchment lined cookie sheet and bake at 325 for 11-13 min.
Cool on pan for 2 minutes before transferring to a wire cooling rack. Let cool completely before eating.
